Big, meaty shrimp, about 16 to 20 per pound, the size you want for grilling, garlic butter shrimp or a special pasta.

Thaw in the fridge or under cold running water. Cook quickly over high heat, just until they turn pink and curl: overcooking makes them tough. Keep frozen until use.
