Coconut flour is made from dried coconut. It is naturally gluten-free, lightly sweet and very absorbent, a favourite in grain-free baking. This one comes from ISIS, the food company of the Sekem group. Because it soaks up a lot of liquid, use about a quarter of the amount of wheat flour and add extra eggs or liquid. Great in pancakes, muffins and breading. Store airtight in a cool, dry place. Allergens: contains coconut.
